Ingredients

  • 4 cups riced cauliflower approx. 1.3 lbs / 600 g, or ½ a medium head of cauliflower
  • 1 large zucchini approx. 10.5 oz / 300 g
  • 1 medium onion approx. 7 oz / 200 g
  • 3 carrots approx. 10.5 oz / 300 g
  • 3.5 oz lean ground beef approx. 100 g
  • 1 pinch sea salt
  • 1 pinch freshly ground black pepper
  • ½ tsp sesame seeds for garnish
  • Extra Virgin Olive Oil EVOO (for sautéing)

Instructions

Prep the vegetables: Grate the cauliflower using a food processor or a box grater to create the "rice" texture; set aside. Separately, shred or grate the carrots and zucchini, keeping each ingredient in its own bowl.
Slice the onion: Cut the onion into thin, elegant strips (julienne).
Sauté the cauliflower: Heat a few drops of EVOO in a large skillet over medium-high heat. Add the cauliflower rice, season with a pinch of salt and pepper, and sauté for 3 to 4 minutes until tender but still crisp. Remove from the skillet and set aside.
Cook the aromatics: In the same skillet, add a touch more oil and sauté the onion until translucent. After a few minutes, stir in the shredded carrots. Sauté together until tender, season to taste, and remove from the pan.
Flash-fry the zucchini: Quickly sauté the shredded zucchini in the skillet. Because it is grated, it will cook almost instantly. Keep the cooking time very short so it retains a vibrant color and doesn't get mushy or fall apart. Season and set aside.
Cook the protein: In a separate skillet, brown the ground beef thoroughly, breaking it apart with a spoon, and season to taste. Chef's Note: If you prefer to change up the protein and use fish instead, I highly recommend lightly steaming it so it stays incredibly soft and tender.
Assemble and serve: To style the dish beautifully, you can layer the ingredients inside a food molding ring on a flat plate, or simply layer them beautifully in a deep serving bowl. Top with a sprinkle of sesame seeds and enjoy!
