Cod Dip (Cod Brandade)
Healthy Cod Dip: A Flourless, Mediterranean-Style Brandade
If you have ever visited the Basque Country, Catalonia, or Portugal, you have likely encountered the legendary Cod Brandade. It is one of those culinary treasures that, once tasted, is never forgotten. Traditionally, brandade is a creamy emulsion of cod, olive oil, and sometimes potatoes or flour to provide bulk.
As a nutritionist with over a decade of experience, I’m always looking for ways to simplify classic recipes while improving their metabolic profile. My version of this Cod Dip is inspired by that tradition but refined for a modern, health-conscious lifestyle. By removing the flour and focusing on high-quality fats and protein, we create a dish that is as nutritious as it is delicious.
A Tale of Two Regions: Brandade vs. Atascaburras
The beauty of cod is how deeply it is rooted in Mediterranean history. While Brandada de Bacalao is the star of the Mediterranean coast, did you know that in Castilla-La Mancha (in the heart of Spain), there is a similar recipe called Atascaburras?
The goal of both dishes is the same: to achieve a smooth-textured cream where the clean, oceanic flavor of the cod is the undisputed protagonist. Whether you call it a dip, a spread, or a brandade, the key lies in the quality of the emulsion.
This versatile cod dip works beautifully as a protein-rich side dish, a dipping sauce for fresh vegetables, or a gourmet filling for peppers.
Why You Should Make Your Dips at Home
In my clinic, I always emphasize that cooking at home is the most effective way to protect your health. When you buy industrial dips or sauces, you are often consuming hidden sugars, seed oils, and preservatives.
By preparing this Cod Dip yourself:
- You control the ingredients: No fillers, just real food.
- You avoid additives: No artificial stabilizers or flavor enhancers.
- You customize the flavor: You can adjust the intensity of the garlic or the creaminess to your exact liking.
- Nutritional diversity: Homemade sauces add color, healthy fats, and high-quality protein to your diet.

Only 4 Main Ingredients for Maximum Flavor
I have simplified this recipe to its essence.
- Cod (Desalted): Make sure it is at its “point of salt” (correctly desalted).
- Garlic: The aromatic soul of the Mediterranean.
- Extra Virgin Olive Oil (EVOO): For a heart-healthy, silky emulsion.
- Whole Milk or Cream: This replaces the traditional flour/potato, providing a rich texture without the carbohydrate load.
The Tweaks: To elevate the flavor, I love adding ground white pepper, a touch of nutmeg (optional), and whatever fresh herbs I have on hand, parsley and oregano are my personal favorites.
Step-by-Step Preparation
- Infuse the Oil: Gently heat the EVOO (Extra Virgin Olive Oil) with the garlic. You want the garlic to become fragrant and golden, but never burnt, as that would make the dip bitter.
- Cook the Cod: Add the desalted cod to the infused oil. It will cook very quickly, just a few minutes until it begins to flake.
- The Emulsion: Remove the cod and garlic from the heat. Gradually add the cream or milk while blending or whisking. This is where you create that smooth, cloud-like texture.
- Seasoning: Add your white pepper, nutmeg, and fresh herbs. Give it one last mix and let it rest.
Preparing your own dips at home ensures you are eating real, whole foods while avoiding the additives found in industrial supermarket products.
How to Serve Your Cod Dip (Low-Carb Style)
Traditionally, brandade is served on a slice of baguette. However, for those of us following a low-carbohydrate or diabetic-friendly diet, there are much more exciting (and healthier) ways to enjoy it:
- My favorite way to eat this is with raw carrot and celery sticks. The crunch of the vegetables perfectly complements the creaminess of the cod.
- I often make homemade seed crackers to serve alongside this dip.
- Use it to fill green peppers or fresh endive leaves for a sophisticated appetizer.
- The “Dip Trio”: If I’m hosting, I love creating a board with three different colors: a Red Pepper & Walnut Dip (Muhammara), my white Cauliflower & Pecan Dip, and this delicious Cod Dip.
- Try dipping steamed cauliflower florets into the brandade. It is delicious.
The Nutritionist’s Perspective: Cod as a Functional Food
Cod is one of the most beneficial fish you can include in your diet. It is an incredibly lean source of protein, making it a “functional food” for weight management and muscle maintenance.
Heart Health: Rich in Omega-3 fatty acids (though lower than oily fish like salmon, it still contributes to a healthy heart).
Brain Support: Excellent source of Iodine and Selenium.
Metabolic Friendly: By using cream or whole milk instead of flour, this recipe has a very low glycemic index, making it ideal for managing insulin levels.
Cod brandade is a nutrient-dense way to enjoy high-quality seafood protein in a format that is both satisfying and incredibly easy to digest.
Have you ever tried a classic brandade? Do you enjoy preparing your own sauces to add life and color to your appetizers? As a nutritionist, I can tell you that these small shifts, from store-bought to homemade, are the foundation of a healthy life.
